Weekending | Disney Day Trip

I was one happy wife this weekend because Stephen didn't have to work and we were able to go to Disney on Saturday! I won single day tickets through work and this would have been our last weekend to go before they expired. We were worried Stephen would have to work this weekend and we wouldn't get to use them but thankfully he didn't have to go in!

I'm going to skip right to Saturday and I'll jump back to Friday at the end. I was really wanting to go to Disney when they had their fall decorations up and when it would feel a little bit cooler outside. We were able to hit 1.5 of those things - the fall decorations were on full blast and while it was super hot during the day, the evening and night was so nice. We had an amazing time and were completely exhausted at the end of the day - we didn't even stay for the fireworks we were so tired!

Magic Kingdom just built these amazing areas in front of the castle where you can sit on grass (fake grass that is amazing) and relax. We decided to just lay down and enjoy the nice weather for a while since it was too crowded to do some of the rides. If you follow me on Snapchat, you saw that a lady brought 4 service dogs with her and was trying to get a picture with them all in front of the castle. Oh, and she dressed them all up in Disney costumes. It was hysterical and definitely caused a scene. 



Magic Kingdom recently installed a Captain Jack treasure hunt. There are 5 different maps and you travel around Adventureland looking for different treasures with your wristband. It was actually really neat and all the different spots had interactive clues. We definitely added a few extra miles to our step count doing all 5 maps, but it was worth it ;)



Since it's so hard to get a reservation last minute at any Disney restaurant, we ended up eating at the same place for lunch and dinner. And of course, we had to finish the night off with an ice cream sundae. We had such a great day relaxing and spending time together at Disney! 


So back to Friday, after work I ran down to a Target about 30 minutes south from our house to finally pick up the booties I've been looking for (right now they're on sale for $24)! I can't wait to get some good use out of them! I also grabbed these black flats because mine were completely falling apart but I was tempted to get these adorable cheetah heels. I may or may not have wandered around the store and snagged some adorable mini pumpkins for $6. I am obsessed with them and think they're so cute.






I also found that Target carries small bags of the delicious caramel apple lollipops. These bring be right back to my childhood - best Halloween candy!


After church on Sunday, I cleaned while Stephen did yard work. Then I gave him a haircut and before we knew it, it was 3:30 and our day was quickly ending. Stephen grilled out for the 3rd weekend in a row which was fantastic because I didn't have to cook dinner and got to enjoy this view while blogging :)

One
This week has been crazy busy to say the least! I can't go into too much details but work has been super busy (which is a fantastic thing) so Stephen and I decided to be rebels and run to Downtown Disney on Tuesday evening. Of course, we did the usual - Earl of Sandwich and Ghirardelli and it was fantastic. Downtown Disney has recently finished a lot of their renovations and it is so cool!! If you live close or visit Disney, you have to stop in and see all the neat things they just built!

If Stephen doesn't have to work on Saturday, we are going to Magic Kingdom!! I won single day tickets through work and wanted to save them for fall time. I cannot wait to go spend the day together and enjoy all the fall decorations! Fingers crossed he doesn't have to work. You can see all our past Disney trips (since blogging) here


Three
I'm sure you've heard me talking/complaining about trying to find some good booties for a great price. These booties are amazing (I'd like one in every color, please) but with the $100 price tag, I can't do it. I've found some cute Target booties and waited to buy them to make sure that's what I wanted. Well story of my life, when I went to buy them, they're sold out like everywhere and online. Last night, I found a pair at a nearby Target (called immediately to put them on hold) so hopefully I'll get to run over there after work this evening and pick them up! I also realized that my black flats for work are completely destroyed and I need a new pair. Well, Target to the rescue, is having a BOGO 1/2 off event for all shoes, clothes and accessories - new flats, here I come! These are my absolute favorite pair of flats, but the black ones are too casual for work so I'm opting for the shiny ones. I'm hoping they're comfy.

I'm sure a lot of y'all follow Christina over at Carolina Charm - this week she told everyone that they just found out her precious new baby boy, Thomas, has bilateral congenital cataracts and is going blind.  They have to do immediate surgery so he has a chance of regaining his vision, but is expected to make a recovery and live a normal life. Christina said that today is his first surgery on his right eye and in a few weeks, they'll do another one on his left eye. Please be praying for baby Thomas, Christina, Matt and Caroline as they deal with all the surgeries and uncertainties.

I've been on snapchat for a while now and it started as something with just my mom and sister. I've seen how it's been growing and many bloggers are now using it, which is why I'm trying my hand at it. Baja Fish Tacos

I actually made these tacos a while ago and never got around to posting the recipe. I really liked these tacos but Stephen wasn't a fan - to each, his own ;)





Ingredients:
Tacos
- 1 lb firm, white fish fillet, cut into 1.5" pieces (I didn't do this and it was a mistake)
- 12 oz can Mexican beer
- 1 tbsp taco seasoning
- Vegetable oil
- 1 cup flour
- 1 tsp salt
- 1 tsp granulated sugar
- 1/2 tsp baking powder
- 1 cup Mexican beer
- 1/2 tsp hot sauce
- Tortillas
- 1 medium lime, cut into wedges
- 3/4 cup shredded Monterey Jack cheese
- 3 cups shredded green cabbage
- 1/2 red onion, cut into strips

Baja Sauce
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 tsp taco seasoning
- 1/4 cup fresh lime juice
- 1/2 cup chopped fresh cilantro

Directions:
1. Place fish in a large plastic bag. Add the can of beer and taco seasoning in the bag and chill for a few hours.

2. While waiting, make the Baja sauce by combining all the ingredients. Stir well and refrigerate until ready for use.

3. In a medium bowl, combine lour, salt, sugar and baking powder. Whisk in 1 cup of beer and hot sauce. Remove the fish (discard the marinade) and coat in batter. I cooked the fish on the stove but see the original recipe for directions on how to really fry the fish.

4. Once cooked through, place a few pieces of fish on each tortilla. Squeeze fresh lime juice on the fish, top with the remaining ingredients (or anything else you wish to add) and add the Baja sauce.

Weekending

This weekend was fantastic - we worked around the house and relaxed. Friday after work, we met up with another couple for dinner and it was a lot of fun! Of course, I didn't get any pictures but it was so nice getting to know our new friends.

Saturday we woke up and got right to work on the yard and the inside of the house. Stephen mowed and cut down part of a tree while I cleaned the inside of the house. After I finished cleaning, I joined him outside to trim the bushes (I may or may not have butchered a bush or two, oh well) - can't wait to get rid of most of the bushes and start fresh! After finding out it would be a 2+ hour wait to get my oil changed, we decided to run to Homegoods instead and get a new desk organizer. I should've taken a before picture but Stephen had all our bills sitting on the desk and I used a small organizer that did not match the office at all. I wanted to get something that matched and would fit everything so the desk could be clean (and maybe my want for a new desk would go away ;)). I really love the new organizer that we found - $20 for a new organizer vs getting a new desk was definitely worth it.




We decided to grill out steaks Saturday night and they were amazing! I'm so glad we finally got a grill, we're both really enjoying it. I paired the steaks with sweet potato puffs and roasted balsamic brussels sprouts.


After church on Sunday, we headed to the golf course to play a par 3 course. As soon as we hit our tee shots on the first hole, it started raining so we called it a day and got a rain check. The storm hadn't hit our house yet, so we chipped some in the backyard until the rain came.


I finally got out our fall decorations and quickly realized that I didn't have a lot of stuff... I'll definitely be hitting up the sales in a few months to stock up for next year. Here are the few items that I have...






I spent the rest of the day ironing and spending time with Stephen since I'll be gone the next 2 days for work. Hope everyone had a great weekend!

I am so thankful that we had a short week and are finally upon another weekend! This week felt long, but short at the same time and I feel like every night, we ran out of time to get everything done. Needless to say, I'm ready for another laid back weekend at home.

One
When my parents were here last weekend, I decided to make a quick snack with sweet potato puffs, goat cheese and honey. It turned out super delicious and is the perfect appetizer or snack. We may or may not end up eating some more this weekend.



Two
I think this recently went viral on Facebook, but I about died watching this! This little girl just cracks me up when talking about her boyfriend, Jared and her little southern accent is the best thing ever.


Three
I saw a Buzzfeed article yesterday that was 21 things all sisters with a 3 year age gap just know and it made me laugh. Basically... yes. This picture is in honor of our 3 year gap and the [obvious] love we have for each other.

This weekend we are officially breaking out the fall decorations!! Woo-hoo! You better believe I'll be burning a fall candle as well! I will be breaking out my Happy Fall Y'all banner and shockingly enough, my mums are blooming - yes, I have yet to kill my new flowers.
