Cheese Dip FTG (For the Guys)

The guys at Stephen's office always bring in different kinds of chips and dip. Stephen wanted to make something to bring for them since he's always snagging some of theirs (hence the FTG - For the Guys name). A family friend of my in-laws always make a delicious dip when they visit in the Bahamas and Stephen always raves about it. Since we don't have the original recipe we decided to wing it and get it as close as we could by memory.

Necessary Ingredients

First, dice the tomatoes, onion and cheese. I decided to cut the cheese into smaller pieces so it'd melt easier/faster.  


Next, mix all ingredients together in an oven-safe dish.


Then, place in the oven at 350 degrees for 45 minutes and let cool.


Serve with tortilla chips and enjoy!

 I put the dip in a microwave-safe container so Stephen could take it to work the next day.


Turns out, everyone loved it! Looks like we'll be making treats for work more often ;)

Ingredients:
- 1 vidalia onion
- 8 oz. pepper jack cheese
- 1 medium tomato or 1/2 container of grape tomatoes
- 3/4 cup mayonnaise
- Tortilla chips

Directions:
1. Heat the oven to 350 degrees
2. Dice the onion, cheese (if not shredded) and tomato
3. Combine all ingredients in oven-safe dish
4. Bake at 350 for 45 minutes
5. Let cool and serve with tortilla chips


Pizza Night

Friday night some girls from work got together for a girls pizza night. We usually try to get together every once and a while and they're always a blast. Friday night proved no different. It's great to get together with everyone after work hours and really spend time getting to know one another. It's such a blessing to work with women who have become my friends and not just coworkers (who would've thought this would happen in an engineering company?)

We decided to get fresh pizza dough from Publix and pile on an array of different ingredients. One of the girls made some homemade garlic bread and another brought delicious cream cheese/oreo truffles.

This pizza had a pesto base with pepperoni, cherry tomatoes, wet mozzarella, dry mozzarella & goat cheese

Everything was delicious and the oreo truffles were the perfect follow-up to pizza. I'm looking forward to another great night filled with eating and chatting!
