Chili Chicken Verde

I love Shay's blog, Mix and Match Mama, she has delicious recipes - some that are super easy to make and some that take a little more time. A while ago, Stephen and I decided to try her Chili Chicken Verde dish and it was delicious and super easy to make (double win!). She paired hers with guacamole that looks delicious, but we paired ours with refried beans and Mexican rice (super healthy right?)






Ingredients
- 1 lb of boneless, skinless chicken breasts (not frozen)
- 1 green bell pepper - chopped
- 1 small onion - chopped
- 1 jalapeno - seeded and chopped (taking out the seeds removes the spiciness)
- 2, 4oz cans of chopped green chilies (we used mild because we don't like spicy)
- 1, 1oz package of taco seasoning or 2 tbsp of chili powder
- 1 jar of salsa verde (we used mild because we don't like spicy)
- 1 cup of chicken broth or water
- Flour or corn tortillas (we used corn)
- Shredded cheese

Directions
1. Place your chicken, chopped green pepper, chopped onion, chopped/seeded jalapeno, cans of green chilies, taco seasoning, salsa and broth/water into your crock pot. Cover and cook on low 6-8 hours or on high for 3-4 hours.

2. Once cooked, shred the chicken and let sit in the mixture to soak the flavors for a few minutes. Top tortillas with the chicken mixture and add some shredded cheese (you can also add some guacamole). Enjoy :)

Weekending | A Baby Shower & Date Night

This weekend was so lovely and relaxing. Friday I flew home from Atlanta and enjoyed some peace and quiet for an hour before Stephen came home (I'm most productive when Stephen isn't home lol). After eating sushi for dinner, we watched Interstellar which ended up being a really good movie! I cried through most of it and now Stephen's into trying to figure out Einstein's theory of relativity. It's definitely an intense movie that really makes you think.

Saturday morning I headed over towards Orlando for a baby shower for a girl at work. She's the cutest pregnant lady ever and is expecting a baby boy in May. We're all so excited for them and can't wait to meet baby Camden William!

That night, Stephen and I ventured to a nearby town for date night. Our plan was to get a lite dinner then go to the Melting Pot for dessert. Well, turns out the delicious Greek salad we ate really filled us up and we were too full to eat at the Melting Pot! Super fail... so we ended up at Chick-fil-a for a frosted lemonade and milkshake (the milkshake was way better than the lemonade but then we looked at the calories and I was thankful for the lemonade).






Sunday we did our usual routine: church, Publix, cleaning and eating. We also nailed down our plans for our Disney trip in 3 weeks! We cannot wait for that weekend! It was so nice spending quality time together this weekend after being gone all last week.

Five on Friday

One
Today I'm traveling home from a business trip to GA. I had a great time and learned a ton but I can't wait to get home and see Stephen again and sleep in my bed. I got to learn a new product for my product line as well as help out with a photoshoot.


Two
While on my business trip, I decided to run to the Chick-fil-a across the street of my hotel to try their new Frosted Lemonade. I had just showered and was just going to run through the drive thru but the line inside was soo much shorter than the drive thru. Good thing I went inside because I ran into one of my good friends from high school!! She was working at this Chick-fil-a and we about died! So neat I got to see her again and it was by total accident as well!


Three
To tack onto #2, I tried the new Frosted Lemonade at Chick-fil-a for the first time and it was delicious! It took a few sips to get used to because it's almost a mix between a milkshake and a smoothie but it was super yummy and I'll totally get another one sometime soon :)


Four-Five
Okay, so I'm totally breaking the rules but I just found the whole Lilly for Target items on Refinery 29 last night and about died... So I tried to pick out my favorites and ended up with a ton, therefore this will be my #4 and #5 - a ton of pictures of my favorite items from their new collection! I cannot wait till this is in stores.

Camilla's Bridal Weekend | Part 2

Yesterday I talked all about my friend Camilla's gorgeous Bridal Shower but this post is for the Bachelorette party!

Quick recap: Camilla (and a few of her bridesmaids) all met in college while at UCF. Camilla and her MOH, Amanda, were bridesmaids in my wedding. We all live in different states so we rarely get to see each other but this weekend felt like no time had passed. I feel like I definitely didn't appreciate how close (location wise) we all were while we were still at UCF. Missing these girls like crazy! Camilla is getting married on May 2nd so this past weekend we had her bridal shower in the morning and bachelorette party at night.

So I'm not going to lie, we're pretty boring (aka not crazy at all). Pretty much our ideal night is hanging out at home in our pj's chit chatting. So don't get too excited - this party was not crazy but it was perfect and we all had a blast! We got dressed up and went to dinner at Vivo's Italian Kitchen at City Walk and then had Camilla complete a few fun tasks around the area.

We spotted a few different bachelorette parties but this was the only one we stopped to talk to

She had to get a picture with a cop and get marriage advice

She also had to get serenaded by a guy and I found the perfect group - high school boys!! You could spot these guys from a mile away and they were perfect

Oh to be in high school again.... nahh lol

After dinner, we went back to the hotel which we had decorated before dinner for games, goodies and presents!! Amanda put together adorable champagne glasses with lipsticks and nail polishes for each of us and she also made an adorable "Kiss the Miss Goodbye" picture frame for all of us to kiss with our new lipsticks. I got the cookies made from a friend and they turned out sooo adorable and perfect for the party! After checking out all the fun Amanda had setup, Camilla got to open her presents and we spent the rest of the night chit chatting and enjoying our time together - we didn't even get to the games or the movie Bridesmaids!

This weekend was so much fun and I'm so thankful for the time and effort Amanda put into making this party special. It was the perfect bachelorette party!
